Chocolate Chip Chickpea Cookie Dough Balls
These Chocolate Chip Chickpea Cookie Dough Balls are so scrumptious and made with just a few ingredients. They make the perfect nutrient-dense snack or dessert!
If you’ve been following my blog for a while, you may have heard me mention that I have a major sweet tooth. And that was when I wasn’t pregnant – so you can imagine how often I get a sweet tooth now that I am 26 weeks along.
While I do enjoy more indulgent treats, I also like to make every bite count during my pregnancy and maximize my nutrient intake.
Fortunately, that doesn’t mean compromising taste – actually quite the opposite. If you’ve tried Medjool dates, you’ll know that they’re nothing short of rich and delicious, which is why they’re key in these healthy chickpea balls. Dates have been one of my favorite foods recently – not only are they tasty and nutrient-packed, but they also have benefits when consumed during late pregnancy, namely when it comes to ease of labor and delivery.
In addition to dates, these cookie dough-like balls are made with whole grains, beans, and nut butter, which all provide ample protein, fiber, and iron. So, you can see why I love them so much. In case you’re wondering, the answer is no, you cannot taste the chickpeas! These cookie dough balls are absolutely delicious, and they pack in all the essential nutrients and vitamins our bodies need.
One of my favorite parts about this recipe is that it’s so easy to make. You just throw everything into a food processor, roll into balls, and refrigerate. It’s that simple!
And to make them for toddlers, you can sub the chocolate chips with dried fruit (my son loves them with dried blueberries) or just leave them out entirely. I hope you enjoy this snack as much as we do!
- 1 cup rolled oats
- 1 can chickpeas, drained and rinsed
- 8 Medjool dates, pitted
- ½ cup creamy peanut butter
- 1 teaspoon vanilla
- ½ teaspoon sea salt
- ½ cup chocolate chips
- Grind oats to a flour consistency in a food processor.
- Add chickpeas, dates, peanut butter, vanilla, and sea salt and process to a sticky crumbly consistency.
- Add chocolate chips and pulse a few times, until incorporated.
- Roll into balls and store in the refrigerator or freezer.
Not only are these chickpea cookie dough balls great for pregnant women with increased nutrient needs, but they also make a great snack for breastfeeding moms for the same reason.
