Chocolate Chip Chickpea Cookie Dough Balls

These chocolate chip chickpea cookie dough bites are so delicious, nutritious, and easy to make!
Ingredients
  • 1 cup rolled oats
  • 1 can chickpeas, drained and rinsed
  • 8 Medjool dates, pitted
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla
  • ½ teaspoon sea salt
  • ½ cup chocolate chips
Instructions
  1. Grind oats to a flour consistency in a food processor.
  2. Add chickpeas, dates, peanut butter, vanilla, and sea salt and process to a sticky crumbly consistency.
  3. Add chocolate chips and pulse a few times, until incorporated.
  4. Roll into balls and store in the refrigerator or freezer.
