Vegan Mint Chocolate Chip Nice Cream
This vegan mint chocolate chip nice cream is made with four simple whole food ingredients — fresh mint, bananas, coconut milk, and cacao nibs. It’s a quick, easy, and healthy dessert.
Lately, I’ve been getting a lot of feedback from you guys regarding desserts. Basically, you want more of them! I don’t blame you, I’ve got a major sweet tooth myself and healthy desserts are a must-have in #whitskitch.
My favorite go-to healthy dessert is “nice cream” or as I like to call it “faux yo.”
For those who are unfamiliar with the concept, the basic premise of nice cream is that it has the texture of regular ice cream or frozen yogurt, but it’s made with fruit. Some recipes also use ingredients like coconut, coconut milk, or avocado to achieve the desired consistency.
I have a few versions on the blog of this delicious, frozen dessert — my Peanut Butter Chocolate Nice Cream, Blueberry Strawberry Sorbet, Nice Cream Blueberry Crunch Bars, and my most recent Raspberry Bliss Nice Cream.
Since so many people were screaming for more nice cream, I decided to create another easy flavor option which is not only delicious but also delivers a major dose of nutrients.
This Vegan Mint Chocolate Chip Nice Cream is made with four simple ingredients: frozen banana, coconut milk, fresh mint, and cacao nibs.
All of the ingredients can be found on my favorite farm-to-doorstep delivery service, Milk & Eggs.
If you’re not feeling these four, however, the recipe is easily customizable to your taste and ingredient preferences.
For example, you can swap the cacao nibs for chocolate chips for a more indulgent experience. You can sub coconut milk for another creamy plant-based beverage. And, you can use 1/2 teaspoon of peppermint extract instead of the fresh mint to give it that minty flavor if you’re not feeling the fresh herbs.
Fresh mint is an awesome ingredient though because it not only aids in digestion but also contains phenolic compounds that possess antioxidant properties.
You can also do what I did in this recipe and add a cup of fresh spinach to infuse this dessert with even more nutrients, and enhance the green color.
Other quick ways to give it a pop of bright green — add a scoop of spirulina or another green superfood powder or a dash of matcha. If you do the matcha though, don’t eat this late at night or you may be up for hours!
- 4 frozen bananas
- ⅓ cup canned full-fat coconut milk
- 1 cup fresh mint
- 1 cup spinach (optional)
- ¼ cup cacao nibs or chocolate chips
- Combine bananas, coconut milk, mint, and spinach in a high-powered blender or food processor until creamy.
- Stir in cacao nibs.
- Serve immediately or freeze for later.
