Homemade Strawberry Blueberry Sorbet (Vegan)
Hi, I’m Whitney and I’m an ice cream addict.
To be more accurate: I’m an ice cream, frozen yogurt, soft-serve, sherbet, sorbet addict.
If it’s cold and sweet, I want it in my mouth.
Occasionally, I’ll drive an entire 45 minutes just to seek out the sweet, velvety comfort of a soft-serve, chocolate-cake batter swirl.
Some would call it a problem.
I justify this behavior with the fact that the yogurt I seek is only 8 calories an ounce.
Still, it’s full of all kinds of crap that I can’t pronounce.
In an effort to reduce my consumption of low-cal, nutritionally devoid dessert, I started experimenting with my Vitamix to come up with healthy, whole-food alternatives.
I’ve already got the Banana Froyo down to a science, so I’ve moved on to pulverizing other fruits.
So after a delicious stack of banana pancakes for breakfast…
…a lovely day at the beach…
…and a fabulous dinner thanks to Amy Paffrath’s broiled salmon recipe with a baked sweet potato and asparagus…
…I created the most delicious blend to date.
This recipe is insanely easy, and — like a lot of my recipes lately — it only requires three ingredients!
Homemade Strawberry Blueberry Sorbet
1 C. Frozen Blueberries and Strawberries
1/4 C. Unsweetened Vanilla Almond Milk or Light Coconut Milk
Stevia to taste
1. Toss everything in a Vitamix, food processor, or high speed blender and pulverize until it’s smooth.
Note: to get it to mix without having to add more liquid, I had to use the Tamper with my Vitamix. If you’re using a food processor, you may need to stop occasionally and press the fruit down toward the blades to keep it going.
Enjoy as is…
…or add shredded, dried coconut for a healthy, crunchy topping.
Total Calories: about 85 w/o topping (with almond) or 115 (coconut)
This stuff stores well too. So if you can’t eat it all, freeze it for later.
It’s amazing how refreshing and delicious pure fruit can taste. If you stuck this stuff in a little pint container and sold it at Whole Foods, I would never guess it was so healthy.
I may never eat froyo again.
OK, that’s a lie. I definitely will.
But on the reg, this will stave off my sweet tooth.
