Whole Grain Peach N’ Chia Muffins
These Peach Chia Seed Muffins are delicious, hearty and so easy to make! They’re the perfect breakfast or dessert for the whole family.
I know a lot of people find the term “moist” to be a little icky. It just rolls off the tongue weird, right?
Unfortunately, there is no other way to describe these delicious Peach Chia Seed Muffins — they’re so incredibly moist.
Soft, chewy, and tender to the tooth — a hearty snack and comfort food wrapped into one tasty treat.
I recently received a shipment of Naked‘s new Chia Sweet Peach smoothies and had the crazy idea of using a bottle to make muffins.
I often replace butter or oil in baked goods with pureed fruit, and occasionally sub “chia eggs” for regular eggs when making vegan meals.
So when I saw the smoothie, a lightbulb went off — this bottle of delicious pureed fruit and seeds might be able to single-handedly replace all of the wet ingredients in a vegan muffin recipe. To my delight, it did (and well).
This recipe uses whole wheat flour and oats for its whole-grain base and just one bottle of Naked juice to achieve a slightly sweet, melt-in-your-mouth muffin.
I added a crunchy oat topping to juxtapose the chewy muffin and, of course, to make them look super pretty.
I say, if you have a muffin top, show it off. ;)
These muffins are not only easy to make, but they’re also very nutritious.
They have no added sugar (all-natural sweetness from the fruits in the smoothie), protein from the oats, and a bunch of fiber from the whole grains.
The peaches provide a rich source of polyphenols, phytochemicals that may help prevent cancer.
And of course — the star of the show — chia seeds are a good plant-based source of omega-3 fatty acids, which may improve cardiovascular health. Each bottle of Chia Sweet Peach has 10,000 mg of chia seeds.
Here’s the recipe!
- 1 ½ cup whole wheat flour
- 1 ½ cup oats
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- pinch of salt
- 1 bottle Naked Chia Sweet Peach
- 1 peach
- 2 tablespoons oats
- 2 tablespoons crushed pecans
- chia seeds
- 1 tablespoon coconut oil, melted
- Preheat oven to 350.
- Combine all dry ingredients in one bowl. Add Naked juice. Stir until just incorporated.
- Mist muffin pan with cooking spray. Pour in muffins.
- Slice peach and press one slice into each muffin.
- Combine all topping ingredients in a small bowl and distribute over muffins.
- Bake for 12-15 minutes.
These muffins are not only easy to make, but they’re also very nutritious. Note – you could also make these using Naked’s Chia Cherry Lime if that’s more your steez.
