How to Make Cauliflower Pizza
Woo Hoo it’s Wednesday! You know what that means… another delicious “What I Ate Wednesday” recipe.
On today’s menu, a low-carb, low-calorie, grain-free Cauliflower Pizza.
If you’ve heard of Cauliflower Pizza before, then I’m guessing you’re incredibly excited to witness the amazing process of creating a pizza out of a vegetable. Prepare to have this incredible recipe demystified.
If you haven’t — don’t lose your appetite — Cauliflower Pizza is fabulous and tastes very similar to regular pizza crust. It’s just way healthier for you.
Cauliflower’s mild taste and starchy consistency works great as a flour replacement. All you need is a food processor, two eggs, spices, and the cauliflower, and you’re good to go. The best part − the entire crust is under 300 calories.
With those stats, you could eat the whole thing… and I did.
How to Make Cauliflower Pizza
Ingredients:
1 medium head of Cauliflower
2 Eggs
1 T. Pizza Spices (oregano, garlic powder, etc)
Directions:
1. Rise cauliflower and break into small pieces.
2. Process the cauliflower into tiny pieces. If your processor is small like mine, you might need to do it in batches.
3. Steam the processed cauliflower in a covered pan with 1/4 C. water for about 8 minutes.
4. Drain any water from the pan and dump cauliflower into a paper towel or a clean kitchen towel, preferably a really thin and porous one. My kitchen towels were all really fluffy, so I used a pillow case. Seriously, whatever works.
5. Once the cauliflower has cooled a bit, ring it out in the towel (or pillowcase, t-shirt, etc), until all the water is removed. I got almost a cup out of mine!
6. The cauliflower should now be doughy. Combine it in a bowl with the eggs and spices.
7. On a baking sheet or pizza sheet sprayed with cooking spray, form your dough into a crust.
8. Bake for about 20 minutes on 400.
9. Add toppings (for this one I did a simply red sauce and sprinkling of low-fat organic cheese) and return to the oven for 5-10 minutes.
10. Enjoy!
Note: I must say that making cauliflower pizza is not the easiest process in the world, but it’s well worth it. Don’t forget to ring out your cauliflower well though, that is the key to a successful pizza!

You definitely should! It took me a few tries before I got it right. Follow the step-by-step picture instructions here though and it will work. And once it does…oh boy is it good :)
