WIAW: Carrot Cake All Day
Usually, carrot cake would not be an appropriate food to eat all day long (unless you’re trying to bulk up for the winter).
I’m not, despite what you might think if you’ve ever seen me take down a pint of froyo.
When your “cake” is made of oats, egg whites, real carrots, and Greek yogurt though, you can eat it whenever you d@mn well please!
I found this amazing recipe on the blog With Peanut Butter on Top. I knew immediately from the blog’s name that I would like everything this chick makes.
On Sunday evening, I whipped this baby up. It was so good, I ended up eating it on Monday for breakfast, a snack, and dessert. Usually, I would feel pretty bad about eating “dessert” all day long, but this recipe is so clean and only 133 calories a slice. Can you believe it??
My family (who I was visiting in Tucson earlier this week) certainly couldn’t. My mom was right there with me eating it all day, and my dad gave it a “not bad.” That’s a huge compliment coming from a man who eats donuts for breakfast and says my healthy recipes taste like cardboard.
It’s gluten-free, sugar-free, low-cal, and low-carb. I’ve renamed it “BLD” Carrot Cake, as in, you can eat this for breakfast, lunch, and dinner.
“BLD” Carrot Cake
2 C. Ground Oats
1 C. Grated Carrots
1/2 C. Unsweetened Applesauce
5 Egg Whites
1/2 C. Stevia (or any type of sugar substitute)
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1/2 tsp. nutmeg
1/2 tsp. allspice
Topping:
1/2 C. Greek Yogurt
1/2 C. Cottage Cheese
1 tsp. Vanilla Extract
1 T. Stevia (0r sugar)
Directions:
1. Set oven to 350.
2. Combine all wet ingredients in one bowl and dry in another. Then mix together.
3. Pour into a circular baking pan, coated with cooking spray.
4. Bake for 20 minutes.
5. Make topping. Combine all ingredients in a blender until smooth.
6. After cake cools, spread with topping and diced walnuts (optional).
7. Enjoy (at any time of the day)!
Total Calories: 133 per slice, serves 8

I have been drinking Zevia for quite some time and was so excited when they said I could be one of their “Certified Smart People.”
Basically, it just means that they have acknowledged that I’m a person who makes smart lifestyle choices, like drinking soda that’s not packed full of harmful chemicals. It’s pretty easy to be a smart person :)

I tried the Zevia cola and didn’t care for it very much, but their Dr. Zevia is really good! I usually get one whenever I go to the store.

I don’t like the taste of regular Cola anyway, so I can’t attest to how good theirs is. My favorites are Orange, Grape, and Strawberry :)

Carrot cake is my weakness, so this sounds like the perfect healthy substitute that I can actually enjoy more than just a bite of!
I like to make pancakes using oatmeal, egg whites and greek yogurt and throw a ripe banana and pecans in, tastes like banana bread and great for breakfast or an afternoon pick me up when I need something sweet with carbs!

I used old fashioned oats that I ground up in a food processor. I’m not sure if stone ground oats will work, let me know if you try then though!
