Gluten-Freedom French Toast

Before you hit the beach or backyard BBQ, I highly recommend you eat a balanced breakfast — we all know the adverse effects of consuming Strawberry Jello Shots on an empty stomach.
Today, I’ve got a fabulous recipe for Gluten-Free French Toast to share with you. In an effort to show my patriotism however, I think it’s best we call it “Freedom Toast,” lest anyone question our loyalties.
I’ve been making this recipe on the regular because it’s so incredibly easy.
Unlike pancakes or eggs benedict, this brunch staple requires little to no effort or skill, and very few ingredients. It’s still a slightly “fancy” option for the weekend though, as opposed to everyday eggs and toast.
I used gluten-free bread from Udi’s, but you can use any bread of your choice, gluten-free or otherwise.
Gluten-Freedom Toast
Ingredients:
6 slices of Bread
2 Eggs
1/4 C. Unsweetened Vanilla Almond Milk
1 tsp. Vanilla or Maple Extract
Dash of Cinnamon
Coconut Oil, Honey/Maple Syrup, Coconut Flakes (optional)
Directions:
1. Combine eggs, milk, extract and cinnamon in a bowl. Whisk.
2. Dunk bread and coat both sides.
3. Heat a skillet to medium-high, spray with cooking spray or coat with coconut oil and cook bread for about 2-3 minutes per side.
4. “Butter” your french toast with coconut oil, drizzle with honey or maple syrup, and sprinkle with toppings of your choice.
5. Enjoy!
Total Calories: 315 for 3 slices (serves 2)
The calorie count will obviously depend on the kind of bread you use. Mine was 80 cals a slice. This also does not including toppings.
I recommend trying the coconut oil as a butter substitute. It tastes fantastic, and a little goes a long way. I used about a teaspoon (40 cals) for all three slices, and then topped with a 1/2 T. honey (30 cals). Using coconut oil is a great way to add some healthy fat to your morning meal.
As you can see I also topped it off with coconut flakes because, ya know, I just have to put coconut flakes on everything I eat these days.

I had french toast for dinner last night and it was amazing! I like to add some ground clove to mine as well though. Wish you had posted this yesterday because the coconut flakes would have been such a great topping! Next time, I guess :)
