Healthy Eggs Benedict & Hollandaise
Today is a very special day.
Maybe not for you (for you, it’s probably just hump day and you’re doing your best not to spend the day Googling camel memes).
Today is my 5-year anniversary with The BF. Yep, 5 whole years! It seems like just yesterday we were squabbling over whether to watch The Victoria’s Secret Fashion Show or go out to dinner. Bet you can guess who was pulling for which option.
Now, I know what you’re thinking…
…but this is not THAT kind of post.
I will however, be giving my man something made of gold this morning.
Nope, it’s not a watch…or cufflinks…or anything else he could trade on Pawn Stars when this all goes down the tubes (just kidding, love you boo)…
..it’s a heaping plate of Healthy Eggs Benedict!
The BF can’t get enough of his Eggs Benedict and it just so happens I recently developed the most delicious recipe ever for my gals over at L.A. Brunchers.
Like me, the BF is super into clean eating and fitness and doesn’t like to eat plates full of butter. This recipe allows him to enjoy all the gold, gooey goodness of a traditional Eggs Benedict and save calories for the chocolate and champagne he better be bringing me tonight.
Eggs Benedict at a restaurant can set you back over 1000 calories and 57 grams of fat. My version is more than half the calories, way less fat, and free of butter.
If this doesn’t win me “The Best Girlfriend of the Year (or past 5 years) Award,” I don’t know what will.
Healthy Eggs Benedict & Hollandaise
Ingredients:
1 Whole Wheat English Muffin (I used Ezekiel)
2 Strips of Turkey Bacon (I used Applegate Farms)
2 Eggs
2 tsp. White Vinegar
For the “Hollandaise Sauce”
1/2 C. FF Greek Yogurt
1 Egg Yolk
1/4 of a Lemon
1/2 tsp. Yellow Mustard or Dijon
1 tsp. Dill
Salt
Directions:
1. Fill a large sauce pan and a small saucepan with 2/3 water. Bring the large to a boil, the small to a simmer.
2. Mix together the greek yogurt, egg yolk, and lemon in a small heat-safe bowl.
3. Once the small sauce pan is simmering, place your mixture in the water. Heat and stir occasionally until the sauce thickens – about 10 minutes.
4. Toss your turkey bacon in a pan sprayed with olive oil and cook for about 2-3 minutes per side.
5. Drop your English muffin in the toaster.
6. Now that the large pan of water is boiling, stir in 2 tsp. white vinegar. Carefully crack each egg into the water. Use a spoon to push the white portion of the egg toward the yolk if it appears to be coming apart.
7. Turn the heat off and cover the pan, cook for 4 minutes.
8. While the eggs are cooking, assemble your benedict. Top each muffin half with a strip of bacon, then add the egg.
9. Your hollandaise should be done now too. Carefully remove the bowl from the saucepan and add the remaining ingredients.
10. Top the benedicts with the sauce.
11. Dig in!
Total Calories: about 480 for the whole recipe
*Feel free to swap the turkey bacon for smoked salmon, crab, or anything else you like!

Happy Anniversary to you and the man! My boy and I are celebrating 6 long years of dating on December 8th! Thru his heart via his stomach is always the way to go! I made him crock pot beef short ribs for our anniversary last year and we are big food network people and love to have “throwdowns” in the kitchen like Bobby vs. Giada! What an adorable couple you guys are!! I actually kinda dislike hollandaise sauce (or maybe I’ve never had a good one and the typical bottom muffin is usually so bland. Awesome recipe and nice job with the poaching!! Yours look perfect!

A few years ago I was in Disney’s fanciest restaurant where I ordered Salmon with a hollandaise sauce! It was so rich I pushed it off the fish to the side of the plate. Within a minute I’m looking at THE CHEF in full regalia explaining to him “why I had a problem with the dish!” lol! Where were you when I needed this?

Thanks Pam! A good tip for eating out would be to just get the hollandaise on the side and use a little ketchup instead. Or ask them to scoop out the bread on the english muffin if they are traditional white or sourdough muffins. However, that kind of takes away from all the fun of a Benedict right? On second though, just make them at home! :)

I love all things with poached eggs, I used to have hollandaise but then cut it out when I realized how bad it was. Love the look of your version of it, looks delicious :)

Thank you for this recipe! This is the best healthy option I’ve tried. One tiny thing I might try next time is to make it in advance, chill it and add a teaspoon of (home made) mayo just before serving to make it a bit thicker.
