Easy, Pleasy Strawberry Protein Pancakes
Nothing makes you feel all warm and fuzzy inside like a hot stack of pancakes.
Oh yeah, and love. I guess love makes you feel all warm and fuzzy inside too.
Is it Valentine’s Day already? As if I haven’t been stockpiling heart-shaped cookie cutters since Christmas.
What better way to show someone how much you care than by whipping up a warm batch of strawberry pancakes and serving ’em up to your honey in bed on Valentine’s morning?
Unfortunately, Valentine’s Day is on a Friday which means many of you will have to rush off to work bright and early, and you def don’t have time to slave away over the stove.
Lucky for you, I’m a pretty lazy cook. The less ingredients the better.
These scrumptious and totally festive flapjacks only require 4 ingredients. They’re a simple deviation from my Crazy Good 3-Ingredient Pancakes, and they are just as quick to make.
In fact, you could even make the batter on Thursday night so all you have to do it pour them in a pan on Friday morning.
As Renee Zellweger said in Jerry Maguire, “Love shouldn’t be such hard work.”
Neither should pancakes.
Strawberry Protein Pancakes
Ingredients:
1/2 Ripe Banana
4 Large Strawberries
1 Scoop Vanilla Protein Powder
1 Egg
Directions:
1. Combine all the ingredients together in a bowl, mashing the banana and strawberry.
2. For thinner pancakes, blend the ingredients together.
3. Pour on a greased skillet and cook on medium-high for about 2-3 minutes per side. Be careful when you flip them as the pancakes can be delicate if you blended the batter.
4. Add your favorite toppings — I used coconut oil as butter, maple syrup, and sliced strawberries.
5. Enjoy!
Total Calories: about 250 (w/o toppings)

I’m the early riser in my household, which is good when the BF wants pancakes, but not when he wants someone to stay up past 10 pm and watch the end of the Bachelor so he doesn’t feel like a #nerdalert watching it alone :)

I never thought of blending the ingredients together to make the pancakes thinner! The Banker likes them REALLY thin – apparently that is a Nordic thing…. His mom makes him thin ‘Swedish pancakes’ every time we are home!

Hey! I love that this exists but when I tried to make it this morning, they came out all mealy/crumbly and were difficult to flip. I put the flame on medium, used avocado oil, forked (didn’t blend), my banana was very ripe, my strawberries were decently so, and I used Garden of Life vegan vanilla protein powder. Any suggestions..??
