Guacamole Deviled Eggs
These guacamole deviled eggs are full of heart-healthy fat and creamy Southwest flavor.
I’m of the belief that if there is an option to add avocado to something, that option should always be taken.
So when I was thinking of a tasty twist on one of my favorite egg dishes for Easter, naturally, adding avocado was top of mind.
Deviled eggs were a favorite food of mine growing up. I was always so eggcited (sorry, one and only Easter pun I promise) when my mom made them for a special occasion, and would usually pop about ten before complaining of a stomachache.
I’m older now though – arguably wiser – and have a little more self-control around these scrumptious bites. So this year, I thought I’d whip up a recipe with a slightly more mature flavor.
These guacamole deviled eggs combine the creamy goodness of this classic dish with the tangy taste of the Southwest.
Using five simple ingredients including fresh avocados and tomatoes, these eggs are a healthy snack full of anti-inflammatory monounsaturated fat and phytochemicals.
They make an impressive Easter appetizer or a unique snack for kids.

- 3 eggs
- ½ avocado
- 2 tablespoons diced tomatoes
- ½ lemon, juiced
- ½ teaspoon garlic powder
- salt and pepper to taste
- cilantro (optional)
- Add 3 eggs to a small pot and cover with an inch of cold water and ½ teaspoon of salt.
- Heat on high until the water comes to a boil.
- Turn off the heat, cover with a lid, and let the eggs sit for 12 minutes.
- Pour out water and rinse eggs with cold water.
- Crack and peel eggs carefully.
- Slice eggs in half and remove yolks.
- Mash avocado and 2 yolks together in a small bowl and stir in tomatoes, lemon juice, garlic powder, salt, and pepper.
- Fill egg halves with mixture.
- Garnish with cilantro.
