Peanut Butter Raspberry Power Balls
These peanut butter raspberry power balls are so delicious and easy to make — a wholesome, on-the-go snack for busy moms and hungry kids!
As a new mom, I find I have much less time to spend in the kitchen and a much greater necessity for easy, healthy snacks for eating on the go.
These Peanut Butter Raspberry Power Balls are great for moms like me who need a quick, wholesome bite when you’re busy tending to a baby.
Before we dive into the recipe though, I want to chat for a minute about the story behind the main ingredient in these balls – frozen raspberries.
We’ve already discussed the fact that there’s no nutritional difference between frozen and fresh produce. If you missed that post, check it out here! >> Fresh vs. Frozen Produce: Is There A Difference Nutritionally?
But have you ever stopped to think of where these special berries come from before they hit the freezer aisle? Raspberries have the reputation of being one of the most difficult fruits to grow — they’re exceptionally delicate, require specific soil and climate conditions, and must be cared for 365 days a year.
Basically, they’re as time-consuming as caring for a new baby!
To lock-in their iconic flavor and color, raspberries are harvested at peak ripeness and frozen (using only cold air) within a few hours. None of this would happen without dedicated, determined, and innovative farmers ready to take on the challenge — a challenge many raspberry farmers say they’ve been called to do.
If you’re interested in learning more about the process, the Raspberry Council recently released a new series called ‘My Name Is Haedyn,’ documenting the story of raspberry farming through the eyes of a 5th generation, 5-year old farmer.
It’s pretty cool! You can check out the videos here:
