Halloween Eats: Monster Macaroons, Green Tuna & Pumpkin “Ice Cream”
Halloween is nearly upon us and I have yet to find a costume.
What I did manage to accomplish was whipping up some spooky treats to enjoy this week without any scary ingredients.
Lack of time however, prevented me from taking any great pictures or writing down the exact ingredients for these delicious bites. Eek.
So for today’s What I Ate Wednesday roundup, we don’t have any fully fleshed out recipes — more of a foodie photo dump with my best attempt at explaining the process. You guys cool with that? OK, good!
Here are a few of my favorite meals in the rotation this week:
Breakfast:
Vegan Pumpkin Waffles with Pumpkin “Ice Cream” on top.
OK, so these technically qualify as a breakfast dessert — but they’re out of this world — and with their angelic ingredients, they can totally pass for a morning meal.

Lunch:
Green Tuna Sandwich
Ever since I created my Deluxe Healthy Tuna Melt last week, I’ve been living off tuna salad. Green tuna is super easy to make and take with me to class, so this has been a staple in my diet the past few weeks. It’s also very apropos for Halloween week — you can tell your kids it’s goblin guts!
All you have to do is mash in an avocado with your tuna. I also like to add a dollop of greek yogurt, salt, pepper, diced pickles and a smidge of mustard.
Dinner:
Brown Rice Veggie Stir-Fry
Sorry, no fun Halloween tie-in here, but this is an easy meal for anyone who’s spending all their time costume shopping this week.
Simply toss cooked brown rice, your favorite veggies, and a couple of eggs in a pan with a little coconut oil and stir fry. I added soy sauce, garlic powder, salt and pepper as well. So healthy, quick and delish.
Dessert:
Chocolate Coconut Monster Macaroons
I found this healthy coconut macaroon recipe on Wellness Mama and adapted it by adding cocoa powder and cocoa stevia drops to make them chocolate. They turned out tasty, but also crumbly – not great for cookies but perfect for a froyo topping.
Unless someone helps me out with a great costume idea, I’ll likely be stuffing my face Friday night with these macaroons, while watching Nightmare on Elm Street and wearing my Minnie Mouse ears from last weekend.

As someone who loves dessert, I can actually turn down candy pretty easily, so Halloween doesn’t haunt me. (See what I did there?). But I can’t walk by cream-cheese frosting, no I can’t. I’m not dressing up this year, in fact I have to teach an evening group fitness class on Friday and just don’t think a costume will be appropriate. You should dress up as an 80’s fitness star, with shiny leggings, thong leotard and big hair. And I’d like to see the photos!! Happy Wednesday:)

I have been seeing that green tuna everywhere and I’ve been meaning to try out that recipe. Those monster cookies are adorable. I might have to make those and bring them to a halloween party that I’m going to this Friday.

Yumm, that food all looks great :) Avocado season is just finishing here in Australia :( I was loving bags for $5! (They are now about $2.50 each!!)
I am excited for Halloween this year as in Australia we don’t really celebrate it (though it’s gettin more popular) but I actually invited to a Halloween party this weekend! Though in Australia everyone associates Halloween with scary stuff only so you can only dress up in scary stuff :( hence I’m going as a dark fairy. Black lace dress, black and red glitter wings and crazy makeup (if it works lol!)

Delicious eats, Whitney! I am not a fan of tuna but love making chicken salad with avocado in mayo- will definitely try adding in mustard next time! As cliché as it sounds, Reeses are my favourite Halloween candy. Extra PB? yes please!

Awww, love the Minnie Mouse ears! I haven’t decided on a costume this year, but I think I’m going to be uber lame and welcome the kiddies with my own scary movie marathon.
All of these recipes look delicious (and bonus points that they’re healthy, too!) I love making vegan tuna (with chickpeas) but never thought to add in an avocado. Sounds yummy!! Happy Halloween :)
