Halloween Eats: Monster Macaroons, Green Tuna & Pumpkin “Ice Cream”
Halloween is nearly upon us and I have yet to find a costume.
What I did manage to accomplish was whipping up some spooky treats to enjoy this week without any scary ingredients.
Lack of time however, prevented me from taking any great pictures or writing down the exact ingredients for these delicious bites. Eek.
So for today’s What I Ate Wednesday roundup, we don’t have any fully fleshed out recipes — more of a foodie photo dump with my best attempt at explaining the process. You guys cool with that? OK, good!
Here are a few of my favorite meals in the rotation this week:
Vegan Pumpkin Waffles with Pumpkin “Ice Cream” on top.
OK, so these technically qualify as a breakfast dessert — but they’re out of this world — and with their angelic ingredients, they can totally pass for a morning meal.

Green Tuna Sandwich
Ever since I created my Deluxe Healthy Tuna Melt last week, I’ve been living off tuna salad. Green tuna is super easy to make and take with me to class, so this has been a staple in my diet the past few weeks. It’s also very apropos for Halloween week — you can tell your kids it’s goblin guts!
All you have to do is mash in an avocado with your tuna. I also like to add a dollop of greek yogurt, salt, pepper, diced pickles and a smidge of mustard.
Brown Rice Veggie Stir-Fry
Sorry, no fun Halloween tie-in here, but this is an easy meal for anyone who’s spending all their time costume shopping this week.
Simply toss cooked brown rice, your favorite veggies, and a couple of eggs in a pan with a little coconut oil and stir fry. I added soy sauce, garlic powder, salt and pepper as well. So healthy, quick and delish.
Chocolate Coconut Monster Macaroons
I found this healthy coconut macaroon recipe on Wellness Mama and adapted it by adding cocoa powder and cocoa stevia drops to make them chocolate. They turned out tasty, but also crumbly – not great for cookies but perfect for a froyo topping.
Unless someone helps me out with a great costume idea, I’ll likely be stuffing my face Friday night with these macaroons, while watching Nightmare on Elm Street and wearing my Minnie Mouse ears from last weekend.
