School Girl Scramble
So you know how I did all that Meal Prep Sunday night in an effort to not eat breakfast for every meal of the day?
Well, here’s last night’s dinner. It did have greens and a bunch of the butternut squash I made though.
What can I say, I love egg whites.
School Girl Scramble
Ingredients:
4 Egg Whites
1/2 C. Roasted Butternut Squash
1 C. Kale
1 Tsp. Extra Virgin Olive Oil
Directions:
1. Coat skillet in oil. Saute kale & butternut squash for about 2 minutes. Add egg whites and scramble.
Total Calories: 143
Total Time: 5 minutes
It turned out to be a double english muffin kind of day, which I eagerly scarfed down while trying to graph the density of NaCl.
School is proving to be a bit more time consuming than anticipated. As in, after my 6-7 hours of lecture and lab, I head home to do about 6 more hours of studying and exercises (not the sweaty kind).
But you know what Britney says: #YouGottaWorkB*tch.
Please forgive me for the brevity of this post. While Wednesdays may take a hit during this school sesh, I’ll try to keep my Monday and Friday posts more robust :)

I think, chocolate it that I could eat in each meal… There is a wide choice of tastes. Or nut butter… Definitely it was not the most healthy diet ;)

I LOVE scrambling whatever I have into some egg whites. Its definitely one of my go-to no time meals but also sometime a meal I make when I have plenty of time just cuz I like it.

As for stuff I eat every day? Cottage cheese and oatmeal. I go through so much of those things.

Oh ya, me too :) The BF and I have a Sunday night ritual of healthy pizza and sushi actually. I think we should up it to two nights a week though!

I could eat pancakes for every meal…but the process is too time consuming but cottage cheese isn’t. As gross as that sounds.

I’m with you on being able to eat breakfast at any time of the day. Scrambled eggs and toast is a go-to dinnertime meal when all else fails. Or a bowl of cereal when I have cereal in the house. And like you did, you can mix so many yummy things in with it!
