Make Your Own Healthy Waffle Bar
This past weekend involved yet another whirlwind vacation in the series of multiple, wedding-related excursions I’ve been on recently.
However this weekend was more of a hectic hybrid of sorts, starting Friday night in Sacramento and ending Sunday in Indio for Coachella — with a brief stop in Los Angeles.
No rest for the weary.
Luckily at least half of my weekend involved pretty healthy activities, as we celebrated my sister-in-law-to-be Mary’s bridal shower in Sacramento.
It was an adorable affair, thanks to the many talented ladies in her family.
In addition to the requisite mimosas and pink punch, we also enjoyed a bunch of Pinterest-worthy brunch items.

But my favorite part of the feast was the “Make Your Own Waffle Bar” put together by Mary’s mom, Donna.
I mean, who doesn’t like waffles?!
Donna used my Vegan Pumpkin Waffle recipe and modified it to include a regular egg and applesauce instead of pumpkin puree.
She made all of the waffles the night before so we could quickly reheat them in the oven to enjoy right away, while they were still hot and crispy.
We gathered together the tastiest (and mostly healthy) toppings we could think of: blueberries, strawberries, coconut flakes, chocolate chips, peanut butter, and of course, maple syrup.
I loved that everyone got to customize their waffle to suit their palate.
I — not so surprisingly — went for the fruit, coconut flakes and a dollop of (unpictured) peanut butter.
It was the perfect meal.
You feel like you’re indulging, but most of the food is 100% healthy — a good thing at a bridal shower where many attendees are “shedding/shredding” for the wedding, but would prefer to enjoy the celebration rather than worry about what they’re putting in their mouth.
There was one undeniably unhealthy menu item, but it was also undeniably adorable.
The healthiness of Mary’s fabulous brunch almost made up for the pizza I ended up shoveling post-Neon Carnival in Coachella later that evening.
Back to the shredding for the wedding this week though…
…at least until Friday when my Bachelorette begins. Here we go again.
