Breaking Blueberry Pancakes
Don’t worry, these pancakes aren’t made with meth.
If you aren’t a fan of Breaking Bad, that probably doesn’t make any sense to you. If you are a fan, then you know the show aired it’s finale episode on Sunday and all of the Heisenberg fanatics out there are fiending for their next fix.
Will Showtime’s new Masters of Sex do the trick? Maybe the return of Homeland will satisfy your cravings?
While you figure out what series will whet your appetite for amazing scripted television, whet your whistle with these delicious blueberry pancakes, an ode to Walter White and AMC’s amazing show.
I made these Sunday morning in anticipation of the finale and they were a hit in the English house. I was worried the blue tint might be a little unappetizing, but like all good BB fans know, blue is the best.
These tasty morsels are whole-wheat, high-protein, and low-fat. Would you expect anything less?
I used my favorite protein powder from Body Factory, which is already a blue-green color, to give them the blueish tint.
If I had to guesstimate, I’d say they’re 98% pure. Pure deliciousness that is (bad Breaking Bad joke).
Breaking Blueberry Pancakes
1/2 C. Whole Wheat Pastry Flour
2 Scoops of Body Factory Protein Powder (or any other protein powder you like)
1 Mashed Banana (the riper the better)
1 Egg
1 tsp. Baking Powder
1 tsp. Vanilla
1/2 C. Bluberries
Splash of Unsweetened Vanilla Almond Milk
Directions:
1. Mix everything except the blueberries together.
2. Add a splash of milk to get the batter to your desired consistency. I added about 1/4 C. Add less for thicker cakes.
3. Swirl in the blueberries.
4. Heat batter on a skillet sprayed with cooking spray for about 2-3 minutes per side.
6. Top with more blueberries and sugar-free syrup and go to town!
Total Calories: 315 for half the recipe. Makes 4-5 large pancakes.

Yeah! I always use protein powder. Between that and the egg you can really pack a ton of protein in so you’re not having a carb-loaded food baby for breakfast, haha. Also, if you have tasty protein powder, it really adds more flavor so you don’t have to use sugar or anything.
