Deluxe Healthy Tuna Melt

A dressed up version of a classic tuna melt. An easy, healthy option for lunch or dinner that the whole family will love!
Ingredients
  • 2 Whole Wheat English Muffins (I use Food For Life)
  • 1 Can Tuna, in water
  • ¼ C. Greek Yogurt
  • 1 small Dill Pickle, diced
  • 1 T. Mustard
  • ½ tsp. Stevia (I use SweetLeaf)
  • Salt & Pepper to taste
  • 2 oz. Cheddar Cheese, sliced
  • 1 Tomato, sliced
  • ½ Avocado, sliced
Instructions
  1. Preheat oven to 400 degrees.
  2. Split english muffins in half and toast in a toaster or in the oven for about 3 minutes.
  3. Combine tuna, yogurt, pickle, mustard, stevia, and salt and pepper in a bowl.
  4. Top each english muffin with tuna mixture, 2-3 avocado slices, 2 tomato slices, and ½ ounce of sliced cheese.
  5. Place muffin halves on a baking sheet and bake for about 5 minutes.
  6. Enjoy!
