Vegan Sweet Potato Waffles

These whole-grain sweet potato waffles are easy, scrumptious, and packed with nutrients!
  • 1½ cups oat flour*
  • 1 tsp cinnamon
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 chia or flax egg (1 tablespoon chia or flax + 3 tablespoons warm water)
  • ⅓ cup cooked sweet potato, mashed**
  • 1 cup plant milk
  • 1 tablespoon maple syrup (optional)
  1. Combine all dry ingredients in a large bowl.
  2. Whisk together all wet ingredients in a small bowl, then fold into dry.
  3. Cook in a well-oiled waffle iron according to iron directions.
*Simply grind oats in a blender until they're a fine flour consistency.
**Can sub sweet potato puree
