These Sweet Cherry Mini Pancakes are fun, delicious, and so easy to make!
Ingredients
Mini Pancakes
2 tablespoons chia seeds + ¼ cup warm water
1 cup whole-wheat flour
½ tablespoon baking powder
⅓ teaspoon cinnamon
1 cup non-dairy milk
½ banana
⅓ cup Northwest sweet cherries, pitted
1-2 tablespoons sweetener of choice (optional for added sweetness)
1 tablespoon coconut oil
Sugar-Free Sweet Cherry Sauce
1 cup Northwest sweet cherries, pitted
¼ cup water
1 teaspoon lemon juice
2 tablespoons chia seeds
1 tablespoon maple syrup (optional)
Instructions
In a small bowl, combine chia seeds and warm water. Set aside.
In a large mixing bowl, combine flour, baking powder and cinnamon.
Add cherries, banana, milk, and optional sweetener to the chia seeds and puree in a blender or using a hand mixer.
Fold wet mixture into the dry mixture.
Heat oil in a skillet over medium heat.
Cook mini pancakes for about 1-2 minutes per side until lightly browned.
Enjoy immediately with cherry chia sauce on top.
Sugar-Free Sweet Cherry Sauce
Combine sweet cherries, water, and lemon juice in a blender or puree with a hand mixer. Add to a saucepan with chia seeds, simmer for 3-5 minutes until sauce thickens.
