Sweet Cherry Mini Pancakes - Vegan + Whole-Grain!

These Sweet Cherry Mini Pancakes are fun, delicious, and so easy to make!
Mini Pancakes
  • 2 tablespoons chia seeds + ¼ cup warm water
  • 1 cup whole-wheat flour
  • ½ tablespoon baking powder
  • ⅓ teaspoon cinnamon
  • 1 cup non-dairy milk
  • ½ banana
  • ⅓ cup Northwest sweet cherries, pitted
  • 1-2 tablespoons sweetener of choice (optional for added sweetness)
  • 1 tablespoon coconut oil
Sugar-Free Sweet Cherry Sauce
  • 1 cup Northwest sweet cherries, pitted
  • ¼ cup water
  • 1 teaspoon lemon juice
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup (optional)
  1. In a small bowl, combine chia seeds and warm water. Set aside.
  2. In a large mixing bowl, combine flour, baking powder and cinnamon.
  3. Add cherries, banana, milk, and optional sweetener to the chia seeds and puree in a blender or using a hand mixer.
  4. Fold wet mixture into the dry mixture.
  5. Heat oil in a skillet over medium heat.
  6. Cook mini pancakes for about 1-2 minutes per side until lightly browned.
  7. Enjoy immediately with cherry chia sauce on top.
Sugar-Free Sweet Cherry Sauce
  1. Combine sweet cherries, water, and lemon juice in a blender or puree with a hand mixer. Add to a saucepan with chia seeds, simmer for 3-5 minutes until sauce thickens.
