Vegan BBQ Lentil Jackfruit Sliders

Ingredients
Lentil Jackfruit "Meat"
  • 2 14-oz cans jackfruit (or 1½ 20-oz cans)
  • 1 cup dry green or brown lentils
  • 4 cups water
  • 1 cup BBQ sauce
Coleslaw
  • 1 cup packed shredded carrot (1 large carrot)
  • 1 cup packed shredded cabbage
  • 2 tablespoons vegan mayo
  • 2 tablespoons apple cider vinegar
  • 1 tablespoons mustard

Lentil Jackfruit "Meat"
  1. Drain and rinse the jackfruit and use a fork or your fingers to roughly pull the jackfruit apart.
  2. Add the jackfruit to a saucepan along with the lentils and water.
  3. Bring to a boil, and let simmer uncovered for 20-25 min, or until lentils are soft and the water has evaporated.
  4. Stir in the BBQ sauce, breaking up any remaining chunks, and let simmer for 3 more minutes, adding more water if the mixture starts to stick to the pan.
Coleslaw
  1. While the lentils and jackfruit are simmering, mix all of the coleslaw ingredients together in a large mixing bowl until the mayo, mustard, and vinegar are evenly mixed throughout.
  2. Cut the dinner rolls in half horizontally, and pile high with the lentil/jackfruit "meat", coleslaw, and pineapple, and enjoy!
