No-Bake Pumpkin Peanut Butter Cornflake Clusters

- 1 box One Degree Organic Ancient Maize Flake or Corn Flakes (~5¼ cups)
- ⅔ cup of pureed pumpkin
- 1¼ cups peanut butter
- 1¼ cups maple syrup
- ⅓ cup coconut oil, melted
- 1 tablespoon maple extract (can sub vanilla)
- Warm and combine all wet ingredients in a saucepan over low heat until melted.
- Stir in the cornflakes.
- Line a baking sheet with parchment paper.
- Spoon two heaping tablespoons of cornflakes at a time on to sheet and press together into mounds.
- Place in the refrigerator to harden for about 20 minutes.
- Consume within 1-2 days for optimal texture.
