No-Bake Pumpkin Peanut Butter Cornflake Clusters

These tasty cornflake clusters are crunchy, sweet, and take just a few minutes to make!
Ingredients
  • 1 box One Degree Organic Ancient Maize Flake or Corn Flakes (~5¼ cups)
  • ⅔ cup of pureed pumpkin
  • 1¼ cups peanut butter
  • 1¼ cups maple syrup
  • ⅓ cup coconut oil, melted
  • 1 tablespoon maple extract (can sub vanilla)
Instructions
  1. Warm and combine all wet ingredients in a saucepan over low heat until melted.
  2. Stir in the cornflakes.
  3. Line a baking sheet with parchment paper.
  4. Spoon two heaping tablespoons of cornflakes at a time on to sheet and press together into mounds.
  5. Place in the refrigerator to harden for about 20 minutes.
  6. Consume within 1-2 days for optimal texture.
