Vegan Tofu Egg Sandwich

This tasty tofu "egg" breakfast sandwich is made with just a few simple ingredients.
Ingredients
  • 1 block extra firm tofu, drained and pressed
Sauce
  • 1 tablespoon olive oil
  • 3 tablespoons soy sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon turmeric
  • pinch of salt
For serving
  • English muffin
  • avocado
  • tomato
  • spinach
  • other desired toppings
Instructions
  1. Drain the tofu and use a towel to squeeze out excess liquid.
  2. Cut in half width-wise then split into 6 rectangles and dry a little more.
  3. In a small bowl, combine oil, soy sauce, garlic powder, onion powder, turmeric, and salt. Add tofu to the sauce.*
  4. Bake tofu in the oven at 400 degrees for 20 minutes OR cook stovetop over medium/high heat with more olive oil for about 2-3 minutes per side.
  5. Add to a toasted English muffin with desired toppings, and enjoy!
Notes
*If you have time, marinate the tofu in the sauce in the refrigerator for 4-12 hours.
