Dairy-Free Mocha Cappuccino

- 2 shots hot espresso
- 1 tablespoon unsweetened cocoa powder
- ½ cup Silk Organic Unsweet Soymilk
- 1 teaspoon chocolate or vanilla extract
- 1 teaspoon sweetener of choice (I used coconut sugar)
- ½ cup ice
- In a cup, combine 2 shots of hot espresso with 1 tablespoon unsweetened cocoa powder. Let cool.
- Add the espresso to a blender with the rest of the ingredients.
- Blend until smooth and frosty.
