Easy Thai Peanut Tofu Noodles

These Thai peanut tofu noodles are so easy to make and full of nutritious ingredients like sauteed veggies and a delicious peanutty sauce!
  • 1 block of extra firm tofu
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper
  • ¼ cup soy sauce
  • 2 cups veggies of choice
  • 8 oz cooked noodles
Peanut Sauce
  • 2 tablespoons peanut butter
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
Optional Garnish
  • green onions
  • bean sprouts
  • peanuts
  1. Chop and drain one block of tofu.
  2. Next, toss your tofu chunks with 1 tablespoon of olive oil, garlic powder, and salt and pepper.
  3. Bake at 350 for 20 minutes.
  4. While your tofu cooks, make your peanut sauce by whisking all ingredients together. Set aside.
  5. In a large skillet, heat one tablespoon of olive oil. Add veggies and sauté for about 3-5 minutes, until softened.
  6. Add noodles, sauce, and tofu to the pan, and cook for an additional 2-3 minutes.
  7. Garnish with green onions, bean sprouts, and peanuts.
  8. Enjoy!
