Vegan Gluten-Free Waffles

These oat-based vegan gluten-free Belgian waffles are so easy to make, healthy, and delicious!
  • 1½ cups oat flour
  • ½ tablespoon baking powder
  • ½ tablespoon cinnamon
  • pinch of salt
  • 1 tablespoon chia seeds + 2 tablespoons warm water
  • 1 medium mashed banana
  • 1 cup unsweetened non-dairy milk of choice
  • 1 tablespoon vanilla extract
  1. In a small bowl, combine chia seeds with warm water. Set aside.
  2. Combine all dry ingredients in a bowl.
  3. Combine all wet ingredients, including "chia egg" in another bowl.
  4. Mix wet and dry ingredients together.
  5. Cook according to waffle iron instructions, about 3-5 minutes.
