Vegan Blueberry Muffins

These light and fluffy vegan blueberry muffins are made with healthy whole grains and sweetened with just a hint of maple syrup.
Ingredients
  • 1¾ cup whole wheat pastry flour
  • ⅓ cup oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • ⅓ cup olive oil
  • ⅓ cup maple syrup
  • 2 chia eggs (2 tablespoons chia seeds + 4 tablespoons warm water)
  • 1 medium banana, mashed
  • ¼ cup unsweetened plant milk
  • 1 tablespoon vanilla
  • 2 teaspoons white vinegar
  • 2 cups blueberries

Instructions
  1. Preheat oven to 350.
  2. In a small bowl, combine chia seeds and warm water and set aside for 5 minutes.
  3. In a large bowl, mix together the dry ingredients.
  4. In another bowl, mix together the wet ingredients, including the chia "eggs."
  5. Fold the wet ingredients into the dry, taking care not to overmix.
  6. Fold in the blueberries.
  7. Distribute batter evenly into an oiled muffin tin.
  8. Bake for about 20 minutes.
  9. Let muffins cool for about 5 minutes before enjoying.
