Vegan Christmas Cookies

These vegan Christmas cookies are made with gluten-free oat and almond flour and packed with delicious white chocolate, pistachios, and dried cranberries. The perfect healthy holiday treat!
Ingredients
  • 2 flax eggs (2 tablespoons ground flax seeds + 6 tablespoons water)
  • 1 cup oat flour*
  • ⅔ cup almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅔ cup brown sugar
  • ⅓ cup almond butter
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla extract
  • ¼ cup white chocolate chips
  • ¼ cup shelled pistachios
  • ¼ cup dried cranberries
Instructions
  1. Heat oven to 350.
  2. In a small bowl, combine flax and water. Set aside.
  3. Combine all dry ingredients in a medium-sized bowl.
  4. Combine all wet ingredients in another bowl, including the flax egg.
  5. Mix wet and dry ingredients together.
  6. Fold in chocolate chips, pistachios, and cranberries.
  7. Line two baking sheets with parchment paper.
  8. Form cookie dough into balls, about 2 heaping tablespoons each, and place on baking sheet.
  9. Bake cookies, one sheet at a time, for about 12 minutes each.
  10. Let cookies cool for at least 5 minutes.

*Make yourself by grinding whole oats in a high-powered blender or food processor.
