Sautéed Apple + Arugula Pita Pizzas

- 1 teaspoon coconut oil (or oil of choice)
- ½ apple, sliced
- 1 vegan apple sausage, chopped
- 2 pitas
- ⅓ cup marinara sauce
- ½ cup vegan mozzarella
- 1 cup arugula
- pepper to taste
- Heat oven to 400 degrees.
- In a medium pan, heat 1 teaspoon coconut oil.
- Add apples and sausage and saute until softened, about 3 minutes.
- Spray a baking sheet with cooking oil and place pitas on sheet.
- Spread marinara evenly over pitas.
- Add apples, sausage, and cheese.
- Bake for 10 minutes.
- Top pizzas with arugula and fresh pepper, and enjoy!
