Sautéed Apple + Arugula Pita Pizzas

These vegan apple and arugula pita pizzas are packed with fall flavor and are so easy to make!
  • 1 teaspoon coconut oil (or oil of choice)
  • ½ apple, sliced
  • 1 vegan apple sausage, chopped
  • 2 pitas
  • ⅓ cup marinara sauce
  • ½ cup vegan mozzarella
  • 1 cup arugula
  • pepper to taste
  1. Heat oven to 400 degrees.
  2. In a medium pan, heat 1 teaspoon coconut oil.
  3. Add apples and sausage and saute until softened, about 3 minutes.
  4. Spray a baking sheet with cooking oil and place pitas on sheet.
  5. Spread marinara evenly over pitas.
  6. Add apples, sausage, and cheese.
  7. Bake for 10 minutes.
  8. Top pizzas with arugula and fresh pepper, and enjoy!
