Turmeric Tofu Scramble

- 1 package of organic, extra-firm tofu
- 1 tablespoon cumin
- ½ tablespoon turmeric
- ½ tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- pepper to taste
- ¼ teaspoon chili powder (optional)
- 1 tablespoon avocado or olive oil
- ½ onion, diced
- 1 bell pepper, diced
- 1 cup Shirataki mushrooms, diced
- 1 cup spinach
- Remove tofu from package and drain liquid. You can do this by wrapping the tofu in paper towels and pressing it.
- In a large bowl, break tofu into crumbled pieces and combine with spices.
- In a large saute pan, heat oil over medium heat.
- Add onion and saute for 2-3 minutes.
- Add the remaining vegetables and saute for 2-3 minutes.
- Add the tofu mixture and cook for an additional 2-3 minutes.
