Turmeric Tofu Scramble

A quick and easy vegan breakfast - this tofu scramble is made with flavorful spices and sauteed veggies!
Ingredients
  • 1 package of organic, extra-firm tofu
  • 1 tablespoon cumin
  • ½ tablespoon turmeric
  • ½ tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • pepper to taste
  • ¼ teaspoon chili powder (optional)
  • 1 tablespoon avocado or olive oil
  • ½ onion, diced
  • 1 bell pepper, diced
  • 1 cup Shirataki mushrooms, diced
  • 1 cup spinach
Instructions
  1. Remove tofu from package and drain liquid. You can do this by wrapping the tofu in paper towels and pressing it.
  2. In a large bowl, break tofu into crumbled pieces and combine with spices.
  3. In a large saute pan, heat oil over medium heat.
  4. Add onion and saute for 2-3 minutes.
  5. Add the remaining vegetables and saute for 2-3 minutes.
  6. Add the tofu mixture and cook for an additional 2-3 minutes.
