Quick and Easy Veggie Burger

A quick and easy veggie burger made with mushroom, beans, and colorful vegetables.
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • ½ cup onion, diced
  • 2 cups mushrooms, diced
  • ½ cup carrots, diced
  • ½ cup bell pepper, diced
  • 1 tablespoon coconut aminos (or soy sauce)
  • 1 can beans of choice, rinsed and dried
  • ⅓ cup oat flour (or flour of choice)
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • ½ teaspoon salt
  • pepper to taste
  • chili powder (optional)
  1. Heat oil in a saute pan over medium heat. Add onions and garlic and saute until browned, about 3 minutes.
  2. Add mushroom, carrots, bell pepper and coconut aminos. Cook for about 3-4 more minutes until veggies have softened.
  3. Mash beans in a medium sized bowl or food processor, leaving them somewhat chunky.
  4. Combine beans, veggie mixture, flour, and spices.
  5. Form mixture into patties and cook on an oiled grill pan or saute pan for about 5 minutes per side.
  6. Serve on a warm, toasted bun.
