Vegan "Egg" Salad Sandwich

A quick and easy vegan egg salad made with tofu and flavorful spices.
  • 15 oz package of extra firm tofu
  • 1 tablespoon avocado oil
  • 1 tablespoon nutritional yeast
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • pepper to taste
  1. Drain tofu and press between two paper towels to get rid of excess liquid.
  2. In a small bowl, mash together the tofu, oil, yeast, and spices.
  3. Add pepper to taste.
  4. Enjoy as a sandwich or on a bed of greens.
