Sweet Potato Brownies

Sweet potato brownies made with almond butter. Chewy, fudgy, and delicious. Vegan, gluten-free.
Ingredients
  • 2 tablespoons ground flaxseed
  • ¼ cup warm water
  • 1 large sweet potato, cooked (about 2 cups chopped)
  • 1 cup almond butter
  • ½ cup virgin coconut oil, melted
  • ¼ cup maple syrup
  • 1 tablespoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon sea salt
  • ½ teaspoon baking soda
  • 1 cup dark chocolate chips (vegan) + more for topping
Instructions
  1. Preheat oven to 350.
  2. Combine flaxseeds and water in a small bowl and let sit for 3 minutes.
  3. Blend all ingredients except chocolate chips together in a food processor.
  4. Stir in chocolate chips.
  5. Pour into a greased rectangular baking pan. Sprinkle with additional chocolate chips.
  6. Bake for 30 minutes.
