Sautéed Kale, Apple and Walnut Salad

  • 5 cups kale, washed and chopped, stems removed
  • 2 tablespoons olive oil
  • ½ cup sweet onions, chopped
  • 1 red apple, cored and diced
  • 1 tablespoon apple cider vinegar
  • 1 cup walnuts, chopped
  • salt and pepper
  • grated parmesan (optional)
  1. Massage kale with 1 tablespoon olive oil.
  2. In a large saucepan, heat remaining tablespoon of olive oil.
  3. Add onions and cook for about 3 minutes, until softened.
  4. Add kale, apples and apple cider vinegar. Toss, then cover and cook for 4-5 minutes.
  5. In a bowl, toss kale mixture with walnuts.
  6. Season with salt and pepper to taste.
  7. Sprinkle with parmesan and serve immediately.
