Indian Spiced Sweet Potatoes with Coconut Cashew Sauce
- 2 large sweet potatoes, cubed
- 1 tablespoon coconut oil, melted
- ½ teaspoon cinnamon
- ½ teaspoon cumin
- ½ teaspoon ginger
- ½ teaspoon turmeric
- ½ teaspoon salt
- ¼ teaspoon coriander
- ¼ teaspoon nutmeg
- ¼ teaspoon garlic powder
- 1 cup cashews
- ½ cup unsweetened vanilla coconut milk
- ½ teaspoon garlic, minced
- ¼ teaspoon lavender salt
- thyme (optional garnish)
- Preheat oven to 400.
- Rinse and scrub sweet potatoes with water. Chop into 1 inch cubes.
- In a small bowl, mix together all spices.
- In a large bowl, toss sweet potatoes with coconut oil.
- Evenly distribute spice mixture over sweet potatoes and toss to combine.
- Cover a baking sheet with parchment paper and spread potatoes in one layer.
- Bake for about 25 minutes.
- While potatoes are cooking, combine all sauce ingredients in a high powdered blender or food processor.
- When potatoes are cooked through, drizzle with sauce, garnish with thyme, and serve.
