Indian Spiced Sweet Potatoes with Coconut Cashew Sauce

Ingredients
  • 2 large sweet potatoes, cubed
  • 1 tablespoon coconut oil, melted
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • ½ teaspoon ginger
  • ½ teaspoon turmeric
  • ½ teaspoon salt
  • ¼ teaspoon coriander
  • ¼ teaspoon nutmeg
  • ¼ teaspoon garlic powder
Sauce
  • 1 cup cashews
  • ½ cup unsweetened vanilla coconut milk
  • ½ teaspoon garlic, minced
  • ¼ teaspoon lavender salt
  • thyme (optional garnish)
Instructions
  1. Preheat oven to 400.
  2. Rinse and scrub sweet potatoes with water. Chop into 1 inch cubes.
  3. In a small bowl, mix together all spices.
  4. In a large bowl, toss sweet potatoes with coconut oil.
  5. Evenly distribute spice mixture over sweet potatoes and toss to combine.
  6. Cover a baking sheet with parchment paper and spread potatoes in one layer.
  7. Bake for about 25 minutes.
  8. While potatoes are cooking, combine all sauce ingredients in a high powdered blender or food processor.
  9. When potatoes are cooked through, drizzle with sauce, garnish with thyme, and serve.
