Green Apple Green Lentil Quinoa Salad

- 1 C. Quinoa
- 1 C. Green Lentils*
- 1 Large Carrot, shredded
- 2 Medium Green Apples, chopped
- ½ Red Onion, diced
- 2 T. Extra Virgin Olive Oil
- ¼ C. White Balsamic Vinegar
- Salt and Pepper to taste
- 1 C. Feta (optional)
- Cook quinoa and lentils according to directions on package.
- Combine all ingredients in a large bowl.
- Refrigerate until ready to serve.
*You can also buy cooked lentils. In this case, use about 3-3½ cups.
