Green Apple Green Lentil Quinoa Salad

A tangy summer salad made with lentils, quinoa, green apples and carrots. This dish can be made either vegan or vegetarian.
  • 1 C. Quinoa
  • 1 C. Green Lentils*
  • 1 Large Carrot, shredded
  • 2 Medium Green Apples, chopped
  • ½ Red Onion, diced
  • 2 T. Extra Virgin Olive Oil
  • ¼ C. White Balsamic Vinegar
  • Salt and Pepper to taste
  • 1 C. Feta (optional)
  1. Cook quinoa and lentils according to directions on package.
  2. Combine all ingredients in a large bowl.
  3. Refrigerate until ready to serve.
*You can also buy cooked lentils. In this case, use about 3-3½ cups.
