Lemon Pomegranate Champagne Cocktail

A festive holiday cocktail made with fresh squeezed lemon and pomegranate and topped with bubbly champagne. Healthy, easy and delicious!
Ingredients
  • 1 Lemon
  • ¼ C. Pomegranate Juice
  • 1 tsp. Honey (or sub stevia)
  • Handful of Ice
  • 8 oz. Champagne
  • Pomegranate Seeds (optional)
Instructions
  1. Cut lemon in half.
  2. Squeeze half of the lemon into a cocktail shaker and use the other half to make lemon zest.
  3. Add pomegranate juice, honey and ice to the shaker.
  4. Shake it up!
  5. Strain juice from shaker into two champagne glasses and top with champagne (about 4 oz. in each).
  6. Garnish with pomegranate seeds and lemon zest.
Notes
If you use stevia, it will be about 110 calories per glass.
