Dark Chocolate Cranberry + Pistachio Granola

- 3 C. Old Fashioned Oats
- 1 T. White Chia Seeds
- 1 T. Cinnamon
- 1 tsp. Ginger
- Pinch of Salt
- 1 Banana
- 2 T. Maple Syrup (or Honey)
- 2 T. Coconut Oil (or oil of choice)
- ¼ C. Dried Cranberries
- ¼ C. Chocolate Chips (Lily's Dark Chocolate)
- ¼ Pistachios
- Heat oven to 300 F.
- Mix dry ingredients in a large bowl.
- Combine wet ingredients in a food processor or blender.
- Mix wet with dry.
- Line a baking sheet with parchment paper and spread oat mixture evening on top.
- Bake for 20-25 minutes, flipping half way through.
- Let granola cool.
- Mix in cranberries and chocolate.
- Enjoy!
