Black Bean + Quinoa Summer Salad

- 1 C. Quinoa (uncooked)
- 1 can Black Beans (15 oz)
- 1 Avocado, cubed
- 1 C. Cherry Tomatoes
- ½ C. Feta Cheese
- ½ C. Fresh Parsley, chopped
- ¼ C. Green Onions
- ¼ C. White Wine Vinegar
- 1 T. Extra Virgin Olive Oil
- 1 T. Italian Seasoning
- Salt + Pepper to taste
- Cook quinoa according to directions.
- Wash and slice cherry tomatoes.
- Dice green onions.
- Rinse black beans and combine in a large bowl with the tomatoes, onions, avocado, feta, and parsley.
- Once quinoa is cooked and cooled, combine with the salad.
- Mix vinegar, olive, and seasoning in a small bowl, then pour and mix into the salad.
- Enjoy immediately or store in the refrigerator until ready to serve.
