Black Bean + Quinoa Summer Salad

Ingredients
  • 1 C. Quinoa (uncooked)
  • 1 can Black Beans (15 oz)
  • 1 Avocado, cubed
  • 1 C. Cherry Tomatoes
  • ½ C. Feta Cheese
  • ½ C. Fresh Parsley, chopped
  • ¼ C. Green Onions
  • ¼ C. White Wine Vinegar
  • 1 T. Extra Virgin Olive Oil
  • 1 T. Italian Seasoning
  • Salt + Pepper to taste
Instructions
  1. Cook quinoa according to directions.
  2. Wash and slice cherry tomatoes.
  3. Dice green onions.
  4. Rinse black beans and combine in a large bowl with the tomatoes, onions, avocado, feta, and parsley.
  5. Once quinoa is cooked and cooled, combine with the salad.
  6. Mix vinegar, olive, and seasoning in a small bowl, then pour and mix into the salad.
  7. Enjoy immediately or store in the refrigerator until ready to serve.
