Tri-Color Garlic + Parmesan Carrot Fries

Crispy carrot fries, baked and breaded with garlic, parmesan and almond flour. Healthy and delicious!
Ingredients
  • 1 Bundle of Tri-Color Carrots
  • 2 Egg Whites
  • ½ C. Almond Flour
  • ½ C. Grated Parmesan
  • ½ T. Garlic Powder
  • 1 tsp. Salt
  • Pepper to taste
  • Extra Virgin Olive Oil Spray
Instructions
  1. Heat oven to 400.
  2. Spray a baking sheet with EVOO or cover with parchment paper.
  3. Wash, peel and cut carrots into wedges.
  4. Whisk egg whites in a bowl. Combine almond flour, parmesan, and spices in another bowl.
  5. Dip each carrot in the egg whites, then into the breading mixture. Place on baking sheet.
  6. Lightly mist carrots with EVOO. *If you don't have spray, you can skip this or just carefully drizzle oil over.
  7. Bake for about 20-25 minutes, flipping half way through.
  8. Enjoy!
