The best whole wheat pancakes in the world! Healthy, light and fluffy. Absolutely delicious!
Dry Ingredients:
  • 1 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
Wet Ingredients
  • 1 cup unsweetened soy or pea milk
  • 2 flax eggs (2 tablespoons flaxseed meal + 6 tablespoons water)
  • ¼ cup unsweetened applesauce or 1 mashed banana
  • 1 tablespoon coconut oil, melted (a little extra for cooking)
  • ½ tablespoon vanilla or maple extract
  1. Mix dry ingredients in one bowl, wet in the other.
  2. Mix the two bowls together.
  3. Coat a skillet in cooking spray or coconut oil and cook pancakes for about 2-3 per side over a medium-high flame.
  4. Enjoy!
