Ceddar & Chive Cauliflower "Mashed Potato" Waffles

Healthy, savory waffles made with cauliflower mashed potatoes and served with a fried egg on top. Great for breakfast or a side dish.
  • 2 C. Cauliflower Mashed Potatoes (see below)
  • ½ C. White Whole Wheat Flour
  • 2 Eggs
  • ½ Onion, diced
  • 1 Garlic Clove, minced
  • 2 T. Chives, diced
  • ½ tsp. Baking Powder
  • ¼ tsp. Baking Soda
  • Salt & pepper to taste
  • Cooking spray or olive oil
Optional Toppings
  • Cheddar Cheese, shredded
  • Chives, diced
  • Eggs, fried
  • Greek Yogurt
Cauliflower Mashed Potatoes
  • 1 small head Cauliflower
  • ¼ C. Unsweetened Almond Milk (or milk of choice)
  • Salt, pepper, garlic powder to taste
For the Waffles:
  1. Heat your waffle maker and preheat oven to 200 F.
  2. Cook onions and garlic in a saute pan with cooking spray or a bit of olive oil over medium high heat until browned.
  3. Combine Cauliflower Mashed Potatoes (directions below) with 2 eggs, flour, onion, garlic, chives, baking powder, baking soda, salt and pepper.
  4. Cook waffles according to waffle maker directions.
  5. Carefully place cooked waffles (they may be delicate) on a baking sheet and top with about 1 T. of cheddar cheese each.
  6. Place sheet in the oven to let cheese melt for about 2-3 minutes.
  7. Remove from oven and add optional toppings like extra chives, a fried egg or a dollop of greek yogurt.
  8. Enjoy!
For the Cauliflower Mashed:
  1. Wash and dice a small head of cauliflower, removing stems.
  2. Steam cauliflower in a covered pot with about ½ inch of water for about 15-20 minutes.
  3. Puree steamed cauliflower, milk, salt, pepper and garlic powder in a food processor or high-powdered blender until creamy.
  4. *Calorie count is for one waffle with cheese, without the toppings.
