Tri-Color Garlic + Parmesan Carrot Fries
Crunchy, cheesy, savory and oh so slightly sweet, these carrot fries are — dare I say it — even better than regular potato wedges.
My man is obsessed with potatoes. He has hash browns every day for breakfast and baked french fries are his weekend staple. And yet, he said these tasted as good or better than a regular fried spud.
It’s the golden, faux-fried “breading” that really gives this recipe its wow factor.
Coated in almond flour, garlic and grated parmesan, these carrots bake up crispy on the outside and chewy on the inside, just like your favorite french fries. Instead of being deep fried in a vat of canola oil though, they are dipped in egg whites, glazed in extra virgin olive oil and baked to scrumptious perfection.
You can use regular carrots for the recipe, but I prefer tri-color because they’re so pretty and they each have a unique, delicious flavor.
When I made the recipe, I mixed in a few golden potato wedges too, but the carrots really stole the show.
- 1 Bundle of Tri-Color Carrots
- 2 Egg Whites
- ½ C. Almond Flour
- ½ C. Grated Parmesan
- ½ T. Garlic Powder
- 1 tsp. Salt
- Pepper to taste
- Extra Virgin Olive Oil Spray
- Heat oven to 400.
- Spray a baking sheet with EVOO or cover with parchment paper.
- Wash, peel and cut carrots into wedges.
- Whisk egg whites in a bowl. Combine almond flour, parmesan, and spices in another bowl.
- Dip each carrot in the egg whites, then into the breading mixture. Place on baking sheet.
- Lightly mist carrots with EVOO. *If you don't have spray, you can skip this or just carefully drizzle oil over.
- Bake for about 20-25 minutes, flipping half way through.
- Enjoy!
These carrot fries were an excellent complement to my pre-Valentine’s Day healthy Surf N’ Turf dinner.
Carrots are a great source of fiber and have over 100% of your daily value of Vitamin A — important for the immune system and vision. All the better to see your lover with — wink.
While they all taste delicious, I must say, the yellow carrots are my favorite. I know it’s cheesy, but they make me happy!
