Vietnamese Turkey Banh Mi
One of my favorite things about Thanksgiving is having loads of fresh turkey leftover for days.
But you can only eat so many plain turkey sandwiches (or turkey straight out of the bag) before getting a little bored.
So yesterday I decided to “get fancy” with our leftover turkey and make a healthy version of a traditional Bánh Mì.
A Báhn what, you ask? A Vietnamese style sandwich, served on a baguette and stuffed with meat, usually pork.
As I’m sure you expected though, I “healthified” this classic using fresh roasted turkey, crunchy veggies, heart-healthy fat and whole grains.
The sauce that tops off this whole shebang is usually a spicy mayo-soy sauce combo. Again, I added my own flavor using soy sauce mixed with lemon juice, honey and chili powder. So tangy and tasty.
Served alongside some freshly baked fries, this sandy is just what you need to break out of your leftover turkey rut.
- 1 Whole Wheat Roll
- 3 oz. Turkey
- ⅛ Avocado
- 2 T. Carrots, julienned
- 2 T. Cilantro
- 1 T. Soy Sauce
- ½ T. Honey
- 1 tsp. Lemon Juice
- ½ tsp. Chili Powder
- Toast Rolls in a microwave oven or under the broiler for about 3 minutes.
- Cut a slit down the middle of the roll.
- Stuff with turkey, avocado and veggies.
- Mix all sauce ingredients together in a small bowl. Pour over sandwich.
- Enjoy!
Remember, Thanksgiving turkey is only good in the refrigerator for 3 to 4 days, so eat up!
