Avocado “Flex” Fish Tacos & Key Lime Pie Man-garitas
Happy Cinco de Mayo dudes and dudettes!
While I’m guessing you already have your sombreros on and Skinny Tequila Sangria in hand, if you need a little more inspiration for this sacred American holiday, Gigi and I have a brand new Cinco de Mayo-themed episode of DUDE FOOD for you.
Today we’re whipping up healthy Fish Tacos with an Avocado “Flex” dressing.
But what’s a fish taco without a skinny margarita to wash it down? We’re doing double duty for you dudes and shaking up some Key Lime Pie Man-garitas to wash down your tacos.
For the Fish Tacos:
1/2 lb. White Fish (we used Swai)
1 T. Barlean’s Coconut Oil
1 1/2 T. Taco Seasoning (or 1 tsp. Oregano, 1 tsp. Cumin, 1 tsp. Garlic Powder, 1/2 tsp. Smoked Paprika)
Salt to taste
For Avocado-“Flex” Dressing:
1 T. Barlean’s Fresh Flaxseed Oil
1 T. Cilantro, chopped
1/2 Tsp. Garlic Powder
Juice of 1/2 Lime
For Key Lime Pie Man-garitas:
1 1/2 oz. Tequlia
1 T. Barlean’s Omega Swirl Fish Oil Key Lime Flavor
Juice of 1 Lime
2 oz. Pineapple Juice
