Mini Hawaiian Portobello Pizza Bites
You may be wondering why I’m posting today instead of yesterday…or you may have better things in your life to ponder. Either way, I’ll explain.
The reason I’ve broken my regular M-W-F posting schedule is because this month I was accepted into the elite healthy recipe group, The Recipe ReDux.
The Recipe ReDux is a monthly recipe challenge started by Registered Dietitians (what I’m studying to be!!) and participated in by a select group of healthy living bloggers. Each month they set a theme and we have about 21 days to come up with a dish that fits into the category. This month’s theme: Pizza Party.
Unfortunately, I just joined a week ago so I did my best to throw together a healthy and creative meal for the month.
I’ve already done Cauliflower Pizza, Seafood Pizza, Mexican Pizza, Corn Tortilla Pizza, and my Sunday night special, Healthy Hawaiian Pizza, so I was a little perplexed at first about what to make.
With Superbowl on the horizon, I thought of what kind of pizza-related snacks people enjoy. The first thing to come to mind: Bagel Bites.
I used to pound about ten of em in one sitting in junior high.
They’re not very healthy though, so I tried to think of something else that is mini bagel-sized and chewy….
Ureka, mushrooms! Portobello, specifically.
I served these tasty little morsels at my own Game Night this weekend — the charades kind, not football — and they were a big hit.
While Bagel Bites are 200 calories for 4 pieces, these are only about 28 calories each and made with healthy, wholesome ingredients. I hope you’ll consider them as a tasty, low-cal, and gluten-free alternative to your average Superbowl snacks!
Mini Hawaiian Portobello Pizza Bites
24 (or so) Portobello Mushrooms
1 1/2 C. Organic Pizza/Marinara Sauce
1 C. Skim Mozzarella Cheese
4 strips Turkey Bacon (I used Applegate Farms)
2 Pineapple Spears
Extra Virgin Olive Oil Spray
Directions:
1. Set your oven to broil on high.
2. Rinse mushrooms and remove stems carefully, making sure not to break the caps.
3. Place caps on a baking sheet, spray with extra virgin olive oil, and pop in the oven to broil for about 5 minutes.
4. Cook turkey bacon in a skillet and then chop into tiny pieces.
5. Cut pineapple into tiny pieces.
6. When you remove the mushroom caps, they’ll be filled with water. Pour it out.
7. Fill the caps with about 1 T. of sauce and distribute the turkey bacon and pineapple between them. Then top each with cheese.
8. Return mushrooms to the oven for about 3-5 more minutes, or until cheese is nicely browned.
9. Enjoy!
Total Calories: about 28 each.

Oh my goodness these are so creative! I love them! I used to make stuffed mini mushrooms with Italian flavors all the time for my hubby…but he’s very allergic to then now :(
But man these look awesome, I can see why they were such a big hit! :)

I’ve always wanted to try the portobello pizzas but our mushrooms were tiny and I thought they’d be pointless..I now stand corrected- these look amazing!

Thanks Arman! Yeah, I was afraid they would be too small too but they worked out just fine! You can buy bigger portobellos too to make your own personal pan sized pizza too!

Looks amazing although I have to admit I’ve never been a pineapple on my pizza fan. Is the taste of pineapple overwhelming…or is it possible to skip that part? :) I have REALY got to get back to cooking again. I’ve been terrible at managing my time for that. Sigh…

Have you thought about/tried making something similar on zucchini slices? That might be a cool flavor, but I’m not sure how the slices would hold the weight of sauce and cheese…

I actually have made a similar recipe in zucchini boats and it was awesome! Not sure if thin slices would hold up, but it’s worth a try!
