Honey-Glazed Pear & Feta Crostinis
These crostinis sort of look like little footballs…
I swear this is the last time I’m going to mention Super Bowl. You would think I like watching sports or something?!
While I’ve admitted before that I seriously loathe sitting on my butt watching “the game” — I just can’t seem to grasp why you would want to watch other people being active and having fun instead of doing it yourself — I am a little excited for Super Bowl weekend.
Why you ask? Because it gives me a chance to experiment with new healthy recipes and test them out on my unwitting friends!
You already saw the tasty little morels — eh morsels — I made for my Game (playing) Night the other weekend.
While those took home the MCP Award (Most Creative Pizza), these Pear & Feta Crostinis were definitely the MVB’s of the appetizer tray (Most Valuable Bites).
I’d never made crostinis before but I knew that you really can’t go wrong with any appetizer made of cheese, bread, and honey. It’s an easy touchdown.
And considering the Mini Portobello Pizza Bites were a bit of a risky move, I wanted to play it safe with the rest of my starting line (you know I can’t resist a little word play).
If you want a healthy dish that is sure to please this Super Bowl, takes 10 minutes to make, and looks a tad more impressive than your run of the mill bean dip, I highly recommend these salty sweet bites.
Pear & Feta Crostinis
Ingredients:
1 Whole Wheat or Multigrain Baguette
1 block of Light Feta Cheese (got mine at TJ’s)
2 Ripe Pears
Honey
Salt & Pepper
Extra Virgin Olive Oil
Directions:
1. Set oven to 400 degrees.
2. Slice baguette and lightly mist or brush the crostinis with the olive oil.
3. Bake till crispy, about 3-5 minutes.
4. Top each crostini with one slice of pear and 1 T. light feta. Then drizzle the entire tray with about 2-4 T. honey.
5. Return to the oven for 3-5 more minutes. Keep an eye on it and make sure the cheese doesn’t start to turn brown (a light golden is ok).
5. Sprinkle with fresh sea salt and fresh cracked pepper.
6. Serve!
Total Calories: about 80 per crostini.

I love feta so hard! I will not be cooking for sports this weekend. My Sunday I will be with all the comedy nerds who don’t care about sports doing improv. I may ale cookies for that though! Sugar is the next best thing to beer for getting people to laugh;)

Dude this looks like the sweet and salty combination from the Gods….I don’t watch American Football (or have any idea what it is about) but I’d totally get on board if it includes these kinda foods!

I know. I think I had about 3-4 of them when I made them. Just had those and the mini shrooms as dinner. You could also slice the bread really thin to save cals/carbs if you want!

Oh, those look so yummy and adorable! I’ve never thought to add something sweet flavored to crostini…that’s a great idea and perfect for the super bowl! Although, I admit, I never watch the super bowl…I’m not a football fan in the least, lol :)
