Just Peachy Protein Pancakes
Good morning, friends! I hope everyone’s weekend is off to a wonderful start.
As you know, I usually make the same exact thing for breakfast every morning: six egg whites and 2 pieces of whole-wheat toast or a whole-wheat English muffin with peanut or almond butter.
To many people that would be mind-numbingly repetitive, but for me it never gets old. That breakfast is literally the reason I rise and shine everyday. I just love it that much.
But last Saturday morning I was feeling inspired. I’ve been following Protein Cupcakes on Instagram and she’s always taunting me with the most delicious looking protein pancakes. Since I wasn’t in a rush to make it to work, I decided it was the perfect time to test them out.
These pancakes are low in calories (225), high in protein (12 grams), and gluten-free.
I’ve been dabbling in a gluten-free diet recently to see how my system responds to it. If I decide to stick with it, I’ll let you know more. Whether you’re gluten-free or not though, these pancakes are darn good.
My boyfriend’s mom recently shipped us a batch of peaches, homegrown from their backyard in Elk Grove, CA, and they were ripe for the baking.
So I decided to make a delicious peach puree to top them off. Thanks Donna!
Just Peachy Protein Pancakes
Ingredients:
1/2 C. Old Fashioned Oats (processed to a flour consistency)
1/4 C. Brown Rice Flour
1 T. Cinnamon
Sprinkle of Nutmeg
1 Flax Egg (2 T. Flaxmeal + 6 T. Water – left to sit for 5 minutes)
1/4 C. Unsweetened Vanilla Almond Milk
1/2 Mashed Banana
2 T. Unsweetened Applesauce
1 T. Vanilla Extract
Topping:
One mashed peach
Directions:
1. Mix the flax meal and water and let sit for at least 5 minutes.
2. Combine all dry ingredients in one bowl. Combine all wet ingredients in another bowl. Mix both together.
3. Cook pancakes in a skillet over medium high heat. Should make 6 medium sized cakes or 4 large ones.
4. Rinse peach. Slice and mash peach with a fork in a small bowl. Sprinkle about a teaspoon of sugar on top.
5. Drizzle peach compote over pancake stack and between individual cakes.
6. Enjoy!
The BF enjoyed his pancakes with turkey bacon and egg whites while I added a special final touch to mine: shredded coconut.
