WIAW: Tons of Carbs
When you’re sick, do you eat more or less?
Some people lose their appetite along with their health, while others coddle their tired bodies with comfort food. I’m of the latter group. I like to eat tons of carbs, warm, cheesy food and desserts.
Ok, so that’s not all that different than usual but with my good health to defend me, I usually have more willpower.
For today’s What I Ate Wednesday, for the first time, you’ll get to see what I actually ate this Wednesday. This is mostly because I was too sick and tired last night to write a post for this morning.

Here’s what I ate today…
Breakfast
The regular breakfast: six egg whites, whole wheat English muffin w/ peanut butter plus a make-me-feel-better-when-I’m-sick-treat, Morning Star veggie sausages.
Lunch
An Eggplant sandwich with grilled zucchini, tomato, goat cheese, and pesto on whole wheat bread from Doughboys. My mom got in town this afternoon and Doughboys is one of her favorite lunch spots.
This sandwich certainly doesn’t look as appetizing as the one on the menu, prior to my modifications. But of course, even though I’m “sick indulging,” I couldn’t go for the one on the French baguette with extra, extra-virgin olive oil.
And yeah, I know there’s like four pieces of bread there. I pulled off some of the crust :)
Dinner
Pizza. My absolute favorite comfort food. If only there was some sushi to complement this.
I made this for my mom and I using 1/2 an Applegate Farms Chicken Apple Sausage, 1 Pineapple Spear, 1/2 C. Lite Cheese (they’ve been out of Almond Cheese at Whole Food’s for weeks), and a Whole Wheat Whole Food’s Pizza Crust.
Each slice is only 170 calories. So I ate the whole thing.
Kidding!!!
I had two slices.
Dessert
Last but not least, my favorite healthy, protein ice cream Halo Top in strawberry, straight from the pint. Delish.
Not pictured today: a Blueberry crunch thinkThin bar.
Things are looking up health-wise this evening, and I’m really hoping for a full recovery by Friday. I know you’re hanging on the edge of your seats to find out what happens, so I’ll keep you all posted.

I’m sorry about the almond cheese shortage! I bet they use the same factory as my favorite vegan yogurt, which suddenly closed back in May. There’s been a shortage of dairy-free products since – I’m going crazy!!!!! <3 you and your blog – feel better! xx
