WIAW: Healthy Blueberry-Peach Crisp
Woo hoo, we’re halfway through the week! Celebrate tonight by making this healthy but delightful summer fruit crisp.
Today’s What I Ate Wednesday comes from the Sunday night BBQ I attended this past weekend.
While my friends often shy away from some of my healthier dishes, when asking me to bring a dish to the potluck BBQ, they requested this one specifically.
What I love about this is that it’s so easy to make. It only takes about 10 minutes to prepare and has very few ingredients. You can swap out any fruit you like and it will turn out just the same. I’ve tried it with apples, nectarines, and berry mixes.
I brought it pre-made to the dinner and then just popped it in the oven while we were eating. Simple.
